What is lens distortion and how do I know if my images have it?

Lens distortion is when the optics of your lens distort the view from your camera in a way that makes the images deformed in comparison to the real scene.
A fisheye lens for example, exhibits excessive lens distortion. Distortion grows stronger as image content nears the edges of your frame.

If you are experiencing problems with stitching images that look like they should have no problems stitching, try this: pick an image taken with your camera that contains an object that is known to have straight edges, like a table, doorway frame or wall corner. Load the image into your image editor and draw a straight line from one end of an edge to the other. If the edges stray from the line you made by deforming into a curve towards the edge of the frame, then you have some kind of distortion. This distortion can be corrected in Stitcher.
